In order to cook delicious salmon, you need only only time and few ingredients that are always at hand except porcini mushrooms that should be purchased in advance. Salmon is famous few bones, but the fillet is definitely worth checking out for their presence, especially if the kids will eat the finished dish.
Do not be afraid that the recipe contains wine. Everything, what can serve as toxic substances, evaporate when cooking at high temperatures (cooking and stewing). Therefore the dish in children can eat ready-made without any fear. The main thing is not overdo it with pepper and salt.
The main ingredients:
- salmon fillet – 800 g;
- porcini mushrooms – 600 g;
- carrots – 1 pc.;
- celery stalk – 1 pc.;
- leek – ½ stalk;
- dry white wine – 250 ml;
- garlic – ½ clove;
- bay leaf – 3-4 pcs.;
- clove buds – 3 pcs.;
- rosemary – a few sprigs;
- olive oil, salt and freshly ground pepper – to taste and necessary.
Cooking method
Wash and dice the carrots, celery and leeks. Then clean. Wash and cut thin mushrooms into thin slices. AT in a pan, heat a little olive oil and fry everything prepared vegetables for about 7-8 minutes. Then add mushrooms to them and pass for another 5-6 minutes.
Pour some wine into a separate saucepan, add cloves, garlic, bay leaf and cook until volume is reduced liquid about ½. We filter.
In a prepared baking dish, covered with parchment, lay out our vegetables cooked in a pan with mushrooms, then fish, then fill with the remaining wine. Salt and pepper to your discretion, add sprigs of rosemary and bake in the oven, which must be preheated somewhere to 1800C. The baking process lasts no more than 15 minutes, or even only 12. Periodically open the oven and pour salmon on top of the juice, which stands out.
Serving options: this fish dish is served hot and it it is advisable to eat everything at once. Anyone will be in harmony with him potatoes, especially soft mashed potatoes or pre-baked in oven or slow cooker. Rice is also suitable, whether it is boiled or cooked with stewed vegetables.
