  1. Clean fresh herring from the insides. Cut off the head.
  2. Cut the fins.
  3. Remove the skin.
  4. Separate the fillet from the bones.
  5. Rinse herring fillets well.
  6. Dissolve sugar, salt and lemon juice in water.
  7. Put the fillet in a container.
  8. Add pepper and bay leaves.
  9. Pour the resulting solution.
  10. Close the lid and put in the refrigerator.
  11. Rinse the fish in a day.
  12. Spicy salted herring is ready for use.
