A very tasty ear can be made from perch. This river fish has low bone and lean meat that is considered dietary. The disadvantages of perch include spiky fins and small dense scales, which are poorly cleaned. Therefore in recipes very often homemade perch is cooked together with scales, previously gutting and removing gills from the head. You can still fry perch and smoke.

- Bake carrots with onions, add water and boil vegetable bouillon. You can not remove the husk from the onion, it will give the broth nice golden color.
- Gut the perch, remove the gills.
- Cut into pieces. Throw in boiling vegetable broth and cook 15 minutes at a slow boil. Salt broth.
- Put the fish, remove the skin from it along with the scales.
- Strain the broth through 2 layers of gauze.
- Put diced potatoes into the broth.
- Grind the second carrot and onion and also toss in bouillon.
- Do not forget about the bay leaf. It will add extra flavor. for fish soup.
- Cook for 20 minutes. A few minutes before cooking in the ear put fish, chopped dill and, if desired, chopped ringleted red pepper. Warm to a boil.
- Be sure to give the ear infused for 20 minutes.
- In a plate, put a piece of fish, vegetables, pour the broth and sprinkle with freshly ground black pepper.
