Zucchini zucchini salad with tomatoes and green beans
Ingredients:
1-2 young zucchini,
1 tomato
125 g green green beans
½ red bell pepper
2 cloves of garlic,
basil,
4 tbsp vegetable oil
salt, black pepper – to taste.
Cooking:
Cut zucchini into circles, cook for 2 minutes in boiling salted water and cool. Do the same with the pods. beans. Scald the tomato with boiling water, peel and chop slices. Peel the seeds and cut into small cubes. Mix chopped garlic with oil and basil. Connect prepared vegetables, salt, pepper and put in salad bowl.
Puff zucchini salad with tomatoes
Ingredients:
3-4 young zucchini,
4 tomatoes
2 onions,
50 g of hard cheese
3 cloves of garlic,
250 g mayonnaise
flour, vegetable oil, salt – to taste.
Cooking:
Peel the zucchini, cut into circles, roll in flour and fry in vegetable oil. While the finished circles will be cool, finely chop the onions, tomatoes – into cubes (the peel is better pre-remove). Sauté the onions and tomatoes until tender with a little oil and also let cool. Garlic chop and mix it with mayonnaise. Then take a flat dish and lay the ingredients in layers: zucchini, spread with mayonnaise, Tomatoes (may not be coated with mayonnaise). Next, alternate the layers. Grease the last layer with mayonnaise, sprinkle with grated cheese. Ready the salad is good both warm and cold.
Zucchini soup with tomatoes
Ingredients:
3 stack vegetable broth or water,
1 stack cream
4 small zucchini,
1 tomato
1 carrot
½ onion,
3 cloves of garlic,
¼ tsp oregano
3 tbsp butter
½ tsp curry powder
fresh parsley to taste.
Cooking:
Sauté the onion in butter, salt it, add the carrots grated on a fine grater and fry all for a few more minutes. Boil water or broth, add the sliced cubes of zucchini, put the fried there vegetables and cook for 10 minutes. Dice tomatoes and sauté them 1 tbsp oil, salt and sprinkle oregano. 3 minutes before finish cooking add tomatoes to the broth, let it boil, salt, pepper and add curry. Then mash in a blender, pour the cream, return the resulting mixture to the pan and bring to boiling. Pour the ready-made soup into plates, sprinkle chopped herbs and serve with sour cream and crackers.
Zucchini appetizer with tomatoes
Ingredients:
3 zucchini squash,
2 tomatoes
green onions
dill,
garlic to taste
mayonnaise,
salt,
flour,
vegetable oil.
Cooking:
Combine mayonnaise with chopped herbs and garlic. Zucchini cut into circles, roll each circle in flour and fry quickly on both sides. Then transfer to a paper towel, salt, grease with mayonnaise sauce. Put a circle on top tomato, sprinkle with green onions and grease the sauce again.
Baked zucchini with tomatoes
Ingredients:
2 zucchini,
3 tomatoes
200 g of hard cheese
salt, black pepper, vegetable oil, greens – by to taste.
Cooking:
Wash the zucchini and cut them into circles about 2 cm thick. If the zucchini is old, remove the skin and seeds. Preheat the oven to 180ºWITH . Grease a baking sheet with oil. Slices of zucchini and salt well pepper on both sides and place on a baking sheet. Bake them in oven for 7 minutes. Tomatoes also cut into circles. For each slice zucchini put a circle of tomato and bake in the oven for another 5 minutes. Then take the zucchini with tomatoes from the oven, turn off sprinkle the baked vegetables on top with grated cheese and put in the turned off oven to just let it melt cheese. Sprinkle with herbs.
Zucchini baked with feta cheese
Ingredients:
2 medium squash
2 medium tomatoes
150 g feta cheese
2-3 tbsp fat mayonnaise
1 tbsp flour
vegetable oil, salt, pepper, spices – to taste.
Cooking:
Cut the zucchini into circles and let them rest in order to drain excess juice. Then salt, pepper, add spices. Mix flour with mayonnaise until smooth. Chop tomatoes in small circles. Separately grate the cheese. Zucchini dip in a mixture of flour and mayonnaise and fry in a heated pan over high heat in a little oil on both sides. Ready put the pieces on a baking sheet. Put tomatoes on top of them and sprinkle with grated cheese. Place the pan in the oven, preheated to 180-200ºС, and bake for 15-20 minutes.
Rural ratatouille
Ingredients:
1 small zucchini,
1 eggplant
1 onion,
3 tomatoes
2 cloves of garlic,
3 tbsp vegetable oil
thyme and basil.
Cooking:
Cut the eggplant and zucchini into slices about 1.5-2 cm thick, then cut each circle into 4 parts. Salt, leave on 20 minutes, then wash, while removing the salt, and dry with paper with a towel. Chop pepper and tomatoes into small pieces, onions – cubes. Chop the garlic. Preheat in a deep pan vegetable oil and lightly fry the onion in it until transparent and garlic, add zucchini and eggplant, then pepper. Salt pepper, add thyme and basil. Sauté vegetables on medium fire for 10 minutes. Then cover the ratatouille and simmer 10 minutes more. Then add the tomatoes, cover again and simmer another 10 minutes, if necessary pour 2 tbsp. water.
Stuffed zucchini boats with tomatoes and minced meat
Ingredients:
4 zucchini,
3 tomatoes
1 onion,
500 g ground beef,
200 g of cheese (any)
butter, salt, black pepper, greens.
To decorate:
Cherry tomatoes,
dill greens.
Cooking:
Wash the zucchini, cut in half and remove the pulp with a spoon. Prepare a filling for the boats. To do this, fry in a creamy rings chopped onion, ground beef, then add zucchini pulp and tomatoes to the total mass. Salt in the end pepper and add greens. Grease a baking dish with oil, put zucchini in it and stuff them with prepared minced meat. From above sprinkle with grated cheese and pour some water into the mold. Put in preheated to 180ºC oven for 40-45 minutes. At garnish with halved cherry tomatoes and sprigs dill.
Sour cream stewed zucchini with tomatoes sauce
Ingredients:
1 medium squash
3 tomatoes
200 g thick sour cream,
1 tbsp flour
2 cloves of garlic,
vegetable oil, pepper, salt – to taste.
Cooking:
Peel the zucchini, cut it into slices, salt, roll each circle in flour and fry over high heat until browned. AT first put a layer of zucchini, then a layer of chopped tomatoes. Salt, season with pepper, sprinkle with chopped garlic and pour 100 g of sour cream. Then repeat the layer zucchini, pour it with the remaining sour cream. Put the pan on slow fire and simmer for 20 minutes, then put the dish in the oven and bake at 200ºС for 10-15 minutes.
Cake with zucchini with tomatoes
Ingredients:
2 small zucchini,
2 tomatoes
2 eggs,
150 g flour
2 cloves of garlic,
vegetable oil, mayonnaise, green onion, dill, salt, pepper – taste.
Cooking:
Zucchini grate on a coarse grater, squeeze garlic, add 2 eggs, mix thoroughly the resulting mass, add flour to it, so that the dough is thicker than the pancakes. Preheat the pan with with vegetable oil, put a third of the dough into a pan and fry until golden color, then gently flip the cake to another side and also fry. So make 3 cakes. Field why put the first cake on a plate and grease it with mayonnaise. On put tomatoes into slices. Sprinkle with herbs and garlic. Сwith the other cakes do the same. Zucchini casserole with tomato and minced meat
Ingredients:
3 zucchini,
7-8 tomatoes
400 g minced chicken
4 eggs,
3 onions,
2 tbsp tomato paste
100 g of hard cheese
150 g sour cream
vegetable oil, salt, pepper – to taste.
Cooking
Finely chop the onion, chop the tomatoes in circles. Peel the zucchini, rub on a coarse grater, salt and squeeze the juice. Saute the onion in vegetable oil in a pan, add minced meat to it, salt, pepper to taste, mix and fry a little. Then add the tomato paste and mix. AT beat eggs into a separate bowl until smooth with sour cream and salt it. Oil the baking dish and put in it half grated zucchini, on top – a layer of minced meat, then again zucchini. Put tomatoes on top, fill with sour cream mixture and eggs. And finally, sprinkle with grated cheese. Put form in a preheated oven to 180ºC and bake for 30-35 minutes.
