- In a wide saucepan, bring 600 ml of water to a boil. Add rice and a pinch of salt, boil until tender. Then we recline on colander and douse with cold water, cool.
- Preheat the oven to 200 degrees.
- Zucchini cut into 1 cm thick plates. Salt, pepper and sprinkle with olive oil. Put the plates on the grill and send to the oven for 20 minutes. Cool the zucchini and cut into small pieces.
- Fry nuts in a dry frying pan. Cool and chop.
- Finely chop the parsley. Put rice, parsley in a bowl, nuts and zucchini. Add olive oil (2 tbsp.), Lemon zest and lemon juice. Sprinkle the salad with pepper and salt and mix everything. Sprinkle the finished salad with grated cheese and serve.
