Zucchini boats with minced meat

The stuffed zucchini boats look very festive, and get ready pretty fast. They are suitable for special occasions and for everyday dinner. One boat is prepared for each of the guests. All the flesh is scooped from the unpeeled zucchini halves and mixed in a pan with fried minced meat and other vegetables. You can get a quick tasty mince by removing the shell from the raw Italian sausages. All boats are evenly filled with it and sprinkled with a mixture of breadcrumbs and grated cheeses, which after baking in the oven turns into appetizing golden crust.

Difficulty: Easy Quantity: 8 boats Recipes use measuring containers volume: 1 cup (st.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cups (st.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cup (Art.) – 60 ml. 1 tablespoon (tbsp.) – 15 ml. 1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

  • 4 medium zucchini sliced lengthwise in half
  • 1 tbsp. l olive oil
  • 220 gr raw sweet italian sausages shell take off
  • 220 gr raw hot italian sausages shell take off
  • 1 clove garlic, minced
  • 1 small onion, chopped
  • 2 medium tomatoes, chopped
  • 0.5 tbsp. Parmesan, finely grated
  • 0.5 tbsp. mozzarella grated
  • 1/4 Art. breadcrumbs
  • 2 tbsp. l chopped parsley

Recipe preparation:

  1. Preheat the oven to 200 ° C.
  2. Scrape the zucchini flesh with a teaspoon to make them like boats. Arrange your baking boats in size 22×32 cm. Cut the flesh.
  3. In a medium-sized frying pan over medium heat, heat olive oil. Add the whole sausage and sauté for 4 minutes. Add garlic, onions, chopped zucchini pulp, tomatoes and some salt and black pepper. Fry until soft vegetables about 4 minutes.
  4. In a medium-sized bowl, mix the parmesan, mozzarella, breadcrumbs and parsley.
  5. Put the meat mixture in zucchini boats. Sprinkle on top a mixture of breadcrumbs with cheese. Put in the oven and bake until golden, about 20 minutes.
