Zucchini Boats Stuffed with Turkey

  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsp. l breadcrumbs with spices

Sweet and sour turkey mitballs

  • 1 kg. minced turkey breast
  • 2 tsp seasonings for poultry
  • 1 egg white
  • 2 cans of 425 gr. canned tomato sauce
  • 2 tbsp. low salt chicken stock
  • 1 tbsp. chili sauce
  • 0.5 tbsp. cider vinegar
  • 0.5 tbsp. brown sugar
  • 2 tsp dried thyme

Orzo with pesto

  • 340 gr orzo pasta
  • 2 tbsp. l ready-made basil pesto

Recipe preparation:

  1. Preheat the oven to 200 ° C.
  2. Using a watermelon or regular spoon, scoop out the seeds from the center of each half of zucchini to make 4 long boats.
  3. In a medium-sized bowl, mix diced mitballs (or roasted minced meat from turkey), sour cream, artichokes, 1/4 tbsp. Parmesan, oregano, salt and black pepper. Mix gently to evenly distribute the ingredients. Put the mixture in squash boats. Sprinkle with breadcrumbs and the remaining parmesan.
  4. Bake the boats for 10-12 minutes until they are browned on top and the filling will not warm up. Serve with pasta orzo with pesto. Orzo with pesto: boil orzo pasta as recommended on packaging. Stir with pesto and serve.
  5. Sweet and sour turkey mitballs

    In a large bowl, mix the minced turkey, garlic and seasoning for poultry (or seasoning from dried garlic with herbs without salt), egg protein and 0.5 tsp. salt and black pepper. Mix well and Form approximately 32 balls. Put mitballs to the bottom slow cookers.

  6. In a medium-sized bowl, mix tomato sauce, stock, sauce chili, vinegar, brown sugar and thyme. Pour the mixture mitballs.
