Zucchini and lemon pasta

Ingredients for the recipe:

  • 2 tbsp. l olive oil
  • 4 zucchini sliced in semicircles
  • 2 crushed garlic cloves
  • 1 finely chopped red chilli
  • Salt and ground black pepper
  • 350 g shell pasta
  • 125 g low-fat cream cheese
  • 65 g grated Parmesan
  • Zest and juice 1/2 lemon

Recipe preparation:

  1. Heat oil in a large saucepan, add zucchini, garlic and chili, salt and pepper. Cook for 3 minutes over high heat, then reduce the heat to medium, cover and simmer for about 7 minutes until soft.
  2. Meanwhile, boil pasta in boiling salted water according to the instructions on the package.
  3. Add cream cheese, parmesan, zest and lemon juice to zucchini. Pour 4 tablespoons of water in which pasta was cooked to the sauce turned out. Throw the pasta into a colander and mix with zucchini. Season with pepper and salt to taste and serve.
