- Soak beans in advance in water for 12 hours.
- Drain the water, fill it with new cold water, boil until readiness, for about an hour.
- Cut carrots, onions and celery into cubes of the same size.
- Heat the oil in a pan, add the vegetables and simmer on a weak fire for about 15 to 20 minutes.
- Add rosemary, bay leaf and salt, simmer for another minute three.
- Cut zucchini with pumpkin into cubes. Add to vegetables, stew a minute.
- Add chopped garlic, mix and cook even in for one minute.
- Pour hot water, cook over low heat until soft pumpkin, it will take about 10 minutes.
- Add beans and bean broth.
- Bring to a boil, then add beetroot leaves and washed spinach, cook another two minutes.
- Add pepper at the end. Cover and give to the soup infuse for about five to ten minutes.
