White mushroom soup with pearl barley

Another variant of delicious homemade soup made from combinations of forest mushrooms and cereals. This time we will make it from pearl barley.

  1. Rinse pearl barley and steam in a thermos for 2 hours.
  2. Sort out the mushrooms, clean from coarse dirt and rinse under running cold water. Cut and boil in water at least 40 minutes.
  3. Remove the cereals from the thermos, drain the water and put it on the mushrooms. Salt, add bay leaf and pepper. Cook for 20 minutes.
  4. On warmed vegetable oil, darken to a little blush onions and carrots.
  5. Put the frying to the soup. Cook for 10-15 minutes over low heat. Serve with sour cream and herbs.
