Ingredients for the recipe:

  • 80 gr. thinly sliced prosciutto or hot smoked ham
  • 2 plums, cut into slices a little more than 1 cm.
  • 2 peaches, cut into slices a little more than 1 cm.
  • 80 gr. crumbled gorgonzola cheese (or other cheese with mold)
  • 8 tbsp. chopped fresh herbs (parsley, mint)
  • 1/4 Art. thinly chopped red onion in half rings
  • 3 tbsp. l olive oil
  • 2 tbsp. l sherry vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • Freshly ground pepper
  • 4 slices of Italian bread, toast in a toaster or grill, for filing

Recipe preparation:

  1. Fry the prosciutto in a small pan on a tablespoon olive oil at moderate heat, each side, approximately 1 min. Put on paper towel. Add the remaining 2 tbsp. l olive oil lower temperature to medium, add sherry vinegar, Dijon mustard and salt, pepper to taste, mix until smooth. Then add peaches, plums and red onions to the pan, a little hold on the stove until the onions are soft. Pour into a salad bowl.
  2. Add greens and half of gorgonzola cheese to the salad bowl, shake. Divide the warm salad with plums and peaches by servings, top prosciutto, sprinkle with the rest of the cheese gorgonzola. Serve with italian bread.
