  • 1/4 Art. shredded grana padano or parmesan cheese, and a little more for decoration
  • 110 gr. mozzarella (plain or smoked), large chopped
  • Coarse salt
  • 1 clove of garlic
  • 1/4 Art. extra virgin olive oil, and a little more for spatter
  • 1 bunch of basil, chopped leaves
  • Freshly ground pepper

Recipe preparation:

  1. In a large saucepan, bring the salt water to a boil. Add pasta and garlic and cook as indicated on the package. Leave 1 tbsp. water, drain the rest.
  2. Meanwhile, cut the zucchini into thin slices over a wide grate or use a peeler. Put in a large bowl zucchini, tomatoes, olive oil and basil. Add 1 tsp. salt and pepper to taste.
  3. Crush boiled garlic with the flat side of a knife and add it to bowl with pasta, grana padano cheese and mozzarella. Good mix by adding the amount of water left to the mixture was a little wet. Salt and pepper. Lay on plates, sprinkle with olive oil and sprinkle with cheese grana padano.
