Warm Bean Salad with Shrimp on grill

Mediterranean cuisine is rich in green salads and among others incredibly popular escariol. This lightly the bitter variety feels great on the open spaces of Russia and can grow even in Siberia. Ingredients for the recipe:

  • 1 can (400 gr.) White beans, strain and rinse
  • 450 gr peeled large shrimp
  • 2 large raw sausages of chorizo (approximately 230 gr.)
  • 0.5 tbsp. thinly chopped roasted peppers
  • 1 onion, finely chopped
  • 2 tbsp. l sherry vinegar or red wine vinegar
  • 1/4 Art. olive oil plus 2 tbsp. l
  • 1 large head of escariol lettuce, cut into 4 pieces along lengths with stump
  • Paprika (spicy, sweet or smoked), for topping

Recipe preparation:

  1. Light the grill to moderate heat.
  2. In a large bowl, mix white beans, fried peppers, green onion, sherry vinegar, 1/4 tsp salt and a few peppercorns. In another large bowl, mix the shrimp with 1 tbsp. l olive oil, 0.5 tsp salt and freshly ground pepper. Sprinkle Salad Slices escariol 1 tbsp. l olive oil; salt, pepper.
