Venison in the oven – an original and rare recipe. Not every day have to serve the game on the table. Make a festive meal we were taught by German culinary specialists. In Germany they like to hunt. How to cook venison? In the oven, grilled or stewed – the meat is great! In a word – a delicacy. We offer use special marinade for game, lard with red wine to venison did not seem dry.

To cook venison in the oven, you will need:

  • Venison (or roe meat) – about a kilogram.

For marinade

  • Rapeseed oil – 2 tablespoons
  • Lemon juice – 2 tablespoons
  • Worcester sauce – 1 tablespoon

  • Soy sauce – 1 tablespoon
  • Garlic – 1 tsp gruel
  • Freshly ground pepper – 0.5 tsp.

For baking venison in the oven

  • Carrots – 2pcs.
  • Celery –1 petiole.
  • Onion – 2pcs.
  • Spices: bay leaf, juniper berries, mustard seeds, black pepper.
  • Fat – 50-70g.
  • Sour cream – 200ml.
  • Red wine (dry) – 200ml.
  • Starch – 1 dec.

You can cook venison in the oven like this:

Cut the game in large pieces. Mix the ingredients (see marinade to venison). Each piece of meat is well greased flavorful mass and lay in a dense plastic bag. Pour the leftovers marinade and tightly close. Leave for 4 hours.

Cut the vegetables coarsely. Grease the frypot with vegetable oil. Lay vegetables, mustard seeds, bay leaf, salt. Pour in 100ml water and steam vegetables for 20 minutes in the oven.

Get the venison. Put the pieces on top of the vegetables. On top of the meat put thin strips of fat.

Add a little red wine (50ml), water to the roasting pan, if would need. Put the juniper berries (3-4pcs). Simmer until venison will not become soft. Usually, the process lasts 40-50min, since marinade softens well the fibers of game meat.

For 10-12min. until ready, pour the remaining 50ml into the roasting pan red wine with starch diluted in it. Then, sour cream. it will give a special taste and density to the gravy. Pieces of bacon can to remove.

Take out the delicacy from the oven, serve.
