- Peel, cut and soak the eggplant in cold water.
- Chop the carrots into strips.
- Chop the bell pepper into strips.
- Peel the tomatoes and cut them into cubes.
- Finely chop the onion and herbs.
- Grate the garlic.
- Heat oil in a pan, put eggplant and onions in butter.
- Salt and pepper.
- When the eggplant is cooked, add the carrots and mix.
- After 2 minutes add Bulgarian pepper and mix.
- After 2 minutes, add the tomatoes, mix and reduce the heat to minimum.
- Simmer under a closed lid for about 10 minutes.
- At the end, add herbs and garlic and mix.
