- Peel the onion and cut into half rings.
- Peel the carrots and cut into strips.
- Peel the potatoes and cut into cubes.
- My bell pepper, peeled from the stalk and seeds, chopped straws.
- My eggplant and zucchini and cut into cubes.
- Peel and finely chop the garlic.
- My greens and chop.
- Heat the pan with sunflower oil.
- Fry the onion for 5 minutes on medium heat.
- Add carrots, fry for another 5 minutes.
- Add potatoes, fry over high heat for 2 minutes.
- Reduce the fire to a minimum. Stew for 15 minutes under the lid.
- Add bell pepper, mix.
- Add tomato paste, mix.
- Pour boiling water over everything, add bay leaf and fragrant pepper. Stew under the lid over low heat for 20-25 minutes.
- Add eggplant, simmer for 15 minutes.
- Add zucchini, simmer for 5 minutes.
- Add salt, spices, garlic and herbs. Mix and simmer 15-20 minutes.
