  1. Peel the onion and cut into half rings.
  2. Peel the carrots and cut into strips.
  3. Peel the potatoes and cut into cubes.
  4. My bell pepper, peeled from the stalk and seeds, chopped straws.
  5. My eggplant and zucchini and cut into cubes.
  6. Peel and finely chop the garlic.
  7. My greens and chop.
  8. Heat the pan with sunflower oil.
  9. Fry the onion for 5 minutes on medium heat.
  10. Add carrots, fry for another 5 minutes.
  11. Add potatoes, fry over high heat for 2 minutes.
  12. Reduce the fire to a minimum. Stew for 15 minutes under the lid.
  13. Add bell pepper, mix.
  14. Add tomato paste, mix.
  15. Pour boiling water over everything, add bay leaf and fragrant pepper. Stew under the lid over low heat for 20-25 minutes.
  16. Add eggplant, simmer for 15 minutes.
  17. Add zucchini, simmer for 5 minutes.
  18. Add salt, spices, garlic and herbs. Mix and simmer 15-20 minutes.
