  1. Rice, rinse, pour cold water and leave for 1.5 hours.
  2. Grate the cheese on a medium grater, finely chop the onion.
  3. Peel the pumpkin and cut into small pieces, then fry in vegetable oil for 5 minutes.
  4. Add onion and rice to the pumpkin, simmer for 5-7 minutes.
  5. Then pour in white wine, mix and add the meat broth. Stir, cook over low heat until all liquid is evaporate.
  6. At the end of cooking, add grated cheese and butter. Disconnect and let stand for 10 minutes under the lid.
  7. You can serve in the original form – having cleared half of the seeds pumpkin and filling it with risotto.
