- We will prepare all the necessary products in advance.
- Finely chop the onion and fry in a heated skillet with the addition of oil.
- We clean the veal liver from excess films and cut into thin long plates, the thickness should be approximately 1-3 mm.
- Put the finished onion in a bowl, put the liver in a frying pan. Fry on each side for about 1-2 minutes.
- Pour red wine into the pan. We shift the finished liver on a plate.
- Add the vegetable broth to the pan and boil the sauce until desired consistency. You can also add a spoonful of sauce demiglass.
- Return the liver to the finished sauce, add the butter and stew the liver in the sauce.
- Cut the calf’s liver into pieces and spread on the middle of the serving plate.
- Along the edges we spread a salad of tomatoes and arugula (in advance season with olive oil). Decorate the salad with thin croutons of baguette or parmesan chips.
