  1. We will prepare all the necessary products in advance.
  2. Finely chop the onion and fry in a heated skillet with the addition of oil.
  3. We clean the veal liver from excess films and cut into thin long plates, the thickness should be approximately 1-3 mm.
  4. Put the finished onion in a bowl, put the liver in a frying pan. Fry on each side for about 1-2 minutes.
  5. Pour red wine into the pan. We shift the finished liver on a plate.
  6. Add the vegetable broth to the pan and boil the sauce until desired consistency. You can also add a spoonful of sauce demiglass.
  7. Return the liver to the finished sauce, add the butter and stew the liver in the sauce.
  8. Cut the calf’s liver into pieces and spread on the middle of the serving plate.
  9. Along the edges we spread a salad of tomatoes and arugula (in advance season with olive oil). Decorate the salad with thin croutons of baguette or parmesan chips.
