Unsweetened Kefir Cookies

Recipe preparation:

  1. Preheat the oven to 230C.
  2. In a large bowl, combine flour, baking powder, baking soda and salt. Use your fingers to mix the butter and margarine in the resulting dry mixture. until crumbs are formed. (The faster you knead, the better – no oil should melt.) In the center of the crumbs, make a groove and add chilled kefir there. Stir until smooth. The dough will be very sticky.
  3. Lay the dough on a surface sprinkled with flour, and also sprinkle flour on top. Gently fold the dough in half twice 5 – 6. Then roll the dough into a 2.5 cm thick circle. Cut the cookie 5 cm in diameter. Make sure the shape cuts through the dough completely. Put cookies on a baking sheet so that the edges are barely touched each other.
