  1. Boil udon noodles, following the manufacturer’s recommendations on packaging. Discard in a colander and drain all the water.
  2. Peel and ginger grate 1 cm.
  3. Cut the tofu into small cubes.
  4. Finely chop the green onion feathers.
  5. Bring the mushroom broth to a boil. Mushrooms cut and put in bouillon. Cook for 30 minutes. Put grated ginger. Pour in wine and soy sauce. Mix. Remove from heat. Let stand for 5 minutes.
  6. Put boiled noodles in deep plates or bowls. Put tofu slices on top. Gently pour mushroom broth. Garnish with chopped onions.
