Turkey

Brine

Dry spice mix

  • 1 tbsp. l black pepper peas
  • 2 tsp dried thyme leaves
  • 3 bay leaves
  • 1 tsp carnation buds
  • 6 coarsely chopped garlic cloves
  • 1 tsp dried juniper berries

Dry mixture for rubbing

  • 1/3 Art. crushed dried juniper berries
  • 1/4 Art. whole black pepper

Recipe preparation:

  1. In a small saucepan, mix water, sugar and salt. Bring to boil while stirring until sugar and salt dissolve. Take off pan from the heat and add a dry spice mixture. Allow to cool.
