Turkey Chops with Roasted Salad on grilled sink

Ingredients for the recipe:

  • 0.7 kg turkey fillet
  • Pinch of cayenne pepper
  • 1 and 1/4 tsp ground coriander
  • 5 tbsp. l olive oil
  • 3 strong plums, cut into slices 2 cm thick.
  • 2 tsp freshly squeezed lemon juice
  • 8 tbsp. arugula

Recipe preparation:

  1. Preheat the grill to moderate heat. Place the fillet over one piece between two sheets of plastic film and beat off with a meat hammer or a heavy frying pan to a thickness of 0.5 cm. Transfer the chops into a bowl and mix with cayenne pepper, 1 tsp. coriander, 1 tsp salt, 1/4 tsp black pepper and 1 tbsp. l olive oil.
  2. Mix the plums with the remaining 1/4 tsp. coriander, a pinch of salt and 1 tbsp. l olive oil. Grill plums by flipping one once, until they just begin to soften, 3-4 minutes.
  3. Grill the turkey until cooked, about 2 minutes each each side.
  4. Chop a few slices of fried plums finely; put them in a large bowl. Stir in the lemon juice remaining 3 tbsp. l olive oil and 1/4 tsp. salt and black pepper. Add arugula and mix. Put turkey salad and leftover fried plums.
