Truffle Burger

Restaurant-level burger luxurious in taste and aroma prepared not from truffles, but with the addition of butter with white truffle, truffle salt and cheese with truffles in each component that fills this sandwich with delicious taste. On toasted Aioli garlic sauce made from mayonnaise, garlic and truffle oil, beef is laid out on top cutlet topped with a melted slice of truffle cheese, and that’s it poured with amazing glaze, cooked from port, truffle oil and truffle salt.

Ingredients for the recipe:

Glaze

  • 1.5 tbsp. golden port
  • 2 tbsp. l white truffle oils + optionally to taste
  • 1/8 tsp truffle salt
  • Pinch of sugar

Aioli

  • 0.5 tbsp. mayonnaise
  • 1 tbsp. l white truffle oils + optionally to taste
  • 1 small clove of garlic, minced
  • 2 tbsp. l freshly squeezed lemon juice

Burgers

  • Vegetable oil to grease the pan
  • 0.7 kg ground beef
  • 4 slices of cheese with truffles, e.g. Il Boschetto al Tartufo
  • 4 brioches or Portuguese buns cut horizontally in half
  • Butter, melted to grease

Recipe preparation:

  1. Prepare the icing:

    In a small saucepan over medium heat, bring the port to a boil. Boil until lightly evaporated to a light syrupy state, about 10 minutes. Remove from the stove and mix the truffle butter, truffle salt and sugar; add more truffle oil taste. Allow to cool slightly.

  2. Prepare aioli:

    In a small bowl, combine mayonnaise, truffle oil, garlic and lemon juice; add more truffle oil to taste.

  3. Cook the burgers:

    Heat a cast iron or other frying pan over high heat. upside down. Lightly grease the pan with vegetable oil. Shape out minced meat four cutlets 2 cm thick, with a diameter of 10 cm. Fry, until the cutlets are browned below, 4-5 minutes. Turn over and fry about 4 minutes more for medium frying. Cover each cutlet a slice of cheese and let it melt, about another 1 minute; shift on the plate. Lubricate the cut sides of the buns with the melted butter and fry in a pan for 30 seconds or up to 1 minute.

  4. Spread aioli on the lower halves of the buns; put on top of cutlet. Mix the icing and pour the patties with it; cover on top top halves of buns.
