Tricolor salad with orzo paste

  • 450 gr orzo pasta (rhizoni)
  • 3 tbsp. l olive oil plus 1/4 tbsp.
  • 2 tbsp. arugula (approximately 100 gr.)
  • 3/4 Art. feta cheese
  • 0.5 tbsp. dried cherries
  • 12 fresh basil leaves torn
  • 1/4 Art. roasted pine nuts
  • 3 tbsp. l lemon juice
  • 1.5 tsp salt
  • 1 tsp ground black pepper

Recipe preparation:

  1. In a large saucepan, bring salted water to a boil. Pour the pasta and cook, stirring occasionally, 8 to 10 minutes before state al dente. Drain and put the paste on a large a baking sheet. Sprinkle 3 tbsp. l olive oil mix spread over the entire baking sheet and cool.
