Ingredients for the recipe:
- 350 gr ready-made pizza dough at room temperature (recipe pizza dough)
- Special grease spray
- 30 gr Parmesan cheese (1/3 tbsp grated)
- 60 gr low-fat mozzarella
- 1 tbsp. l wholemeal corn flour
- 3 tbsp. l extra virgin olive oil
- 1 tbsp. low-fat soft ricotta cheese
- Freshly ground pepper
- 1 small head of radicchio
- 2 heads of endive
- 1 tbsp. grape tomato or cherry tomato
- 4 tbsp. young arugula
- 1 tbsp. l balsamic vinegar

Recipe preparation:
- Preheat the oven to 245 degrees. Grease 2 baking sheets with a spray. Grate Parmesan, finely chop the mozzarella slices.
- Cut the pizza dough into 4 pieces. Work surface sprinkle with cornmeal. Roll out with a rolling pin or hands each a piece of dough in the shape of a rectangle measuring 13 by 28 cm. For each put 2 rectangles per baking sheet.
- Lubricate the dough pieces 1 tbsp. l olive oil then on put a small amount of ricotta cheese on each piece and evenly distribute. Put slices of mozzarella cheese on top, sprinkle evenly with grated parmesan and 1/4 tsp. black pepper.
- Bake pizzas for 12 minutes until the cheese melts and the dough turns red.
- While the pizza is toasted, cut the radicchio and endive into thin slices straws, cut the tomatoes into halves. In a large bowl, mix chopped vegetables with arugula remaining 2 tbsp. l olive oil and balsamic vinegar. For each pizza, put 1.5 tbsp. cooked salad. Serve immediately.
