  1. In a pan of 4 liters pour cold water fish heads and tails, put on fire and cook on moderate heat for half an hour, then remove them, if desired, the broth strain.
  2. In a slightly boiling fish broth add diced or potato wedges.
  3. When the broth is boiling, add chopped small pieces of zander. Cook for 15 minutes.
  4. Add chopped onions and grated carrots. Cook everything together for seven minutes.
  5. Then put bay leaf, parsley root (or celery), pepper peas. Turn off the fire, after half an hour you can serve the ear on the table.
