- In a pan of 4 liters pour cold water fish heads and tails, put on fire and cook on moderate heat for half an hour, then remove them, if desired, the broth strain.
- In a slightly boiling fish broth add diced or potato wedges.
- When the broth is boiling, add chopped small pieces of zander. Cook for 15 minutes.
- Add chopped onions and grated carrots. Cook everything together for seven minutes.
- Then put bay leaf, parsley root (or celery), pepper peas. Turn off the fire, after half an hour you can serve the ear on the table.
