- 1 cubed piece of pork loin on the bone 340 g. (save the bone)
- 250 gr frozen tortellini with cheese or meat
- 2 tbsp. l olive oil
- 2 cut lengthwise and then finely chopped and washed leeks (only white and light green parts)
- 2 sliced lengthwise and then finely chopped carrots
- 2 thinly chopped small celery stalks
- 4 crushed cloves of garlic
- 4 tbsp. chicken broth
- 1 small piece of parmesan crust
- 2 wide strips of lemon peel (peeled off with peelers)
- 1 chopped small head of salad chicory
- Salt and ground black pepper

Recipe preparation:
- In a large saucepan, heat the olive oil over medium heat. Add leeks, carrots, celery and garlic and cook, stirring occasionally until the onion softens, about 5 min. Add 2 tbsp. water, chicken stock, parmesan crust, lemon zest and pork bone. Bring to a slight boil and cook, until the vegetables are almost soft, about 15 minutes.
- Using a slotted spoon, catch the parmesan crust, zest and bone from pots. Bring the broth to a boil over medium heat. Add tortellini, chicory and pork cubes; season with pepper. Cook until tortellini and chicory are soft, 4-5 min.
