  • 430 gr. canned red variegated pinto beans, liquid drain
  • 1 medium zucchini or yellow zucchini, cut cubes
  • 2 tbsp. salad mixture of red and white cabbage, carrots and onions
  • 1 lime juice
  • Sliced lime, for serving
  • 8 toastados tortillas (flat crispy corn tortillas) or tortillas
  • 1.5 tbsp. coarsely grated cheddar cheese (approximately 120 gr.)

Recipe preparation:

  1. Heat the vegetable oil in a large pan. Add ground beef, half chopped onion, 1 tsp. salt and pepper chipotle. Fry, kneading meat with a wooden spatula, until minced fry, and the onion does not become soft, for 7 minutes.
  2. Add canned tomatoes, beans and zucchini, cook, stir occasionally until zucchini is soft, about 6 min
  3. Meanwhile, mix the salad mixture with lime juice in a bowl, add salt and pepper to taste.
