- 10 g butter
- 4 ripe pears
- 0.5 l milk
- 3 tbsp. l cognac
- Zest of 1 lemon
- 1 pack vanillin
- Grated chocolate
- 3 tbsp. l sugar for cream
- 2 tbsp. l sugar for toppings

Recipe preparation:
- Combine and mix all the ingredients for the dough. Knead the dough and put it in the refrigerator for half an hour.
- After half an hour, remove the dough from the refrigerator, roll it and put in a pre-lubricated form, while forming sides.
- Prick the dough with a fork and put in the oven for 20 minutes, warmed up to 200 degrees.
- Throw oil in a pan and heat it. Wash the pears and cut into cubes, add to the pan and cover with sugar, caramelize. Add cognac and leave for 5 minutes on a small the fire.
- Pour milk into a saucepan and toss the lemon zest. To put pan on the fire and wait until it boils. Then zest remove from milk and discard, as in the zest itself is not necessary. The main thing here is a lemon flavor. And leave the milk itself boil over very low heat.
- Combine the eggs, vanillin, sugar and flour for the cream with using the mixer to a thick consistency. If the mass is very thick, you can add a couple of spoons of cold milk.
- Pour the whipped mixture with a thin stream, stirring constantly, into boiling milk. Wait until the cream boils and turn off.
- Then remove the mold from the oven. Put on the basis caramelized hot pears. Pear liquid evenly spread over the entire base with a spoon.
- Pour hot cream on pears and evenly to distribute.
- Wait at least an hour until the tart cools down a bit, then put it in the refrigerator for another 2 hours.
- Then get out of the fridge, sprinkle with grated chocolate, cut in portions and serve. Have a nice tea party!
