Recipe preparation:

  1. Preheat the oven to 160 ° C.
  2. In the bowl of the mixer with a nozzle with a spatula (one that looks like a sign pacific) put butter, powdered sugar and vanilla. Beat butter, sugar and vanilla until smooth, 3-4 minutes. Remove the mixer and stir with a silicone spatula flour and salt. Try to knead the dough quickly and not hard, flour you just need to intervene.
  3. Transfer the dough in several batches in a pastry bag with big tipped star. Set the dough in rings with a diameter of 5 see on a greased baking sheet. Bake cookies for 12-15 minutes or until golden brown. Then completely cool.
  4. Caramel sauce: in a large saucepan, mix the sugar, lemon juice and 1/4 tbsp. water. Bring to a boil. Now be be careful and do not shake the pan too often, as this can lead to severe crystallization of sugar.
  5. When the mixture boils, the water will begin to evaporate, and the sugar will become brown, or caramelized. Be patient, it will take some time, 12 to 15 minutes. Do not take your eyes off sugar!   6. Slowly the sugar starts to turn golden, then light brown and then one shade darker. It is in this moment you need to remove the pan from the stove and immediately add the bold cream. When cream is added, the sauce will boil like crazy. Stir whisk until smooth, then add creamy oil two slices at a time, thoroughly mixing after each additions.
  7. For serving, put 4 to 5 pieces on each plate cookies and put a small bowl with 1/4 tbsp. caramel sauce. Sprinkle grains of salt over the sauce. Try not to eat everything cookies right away!
