Recipe preparation:
- Put corn husk in warm water; soak for 30 min. or until they become soft and flexible. Pull out 2 husks out of water and set aside. Make 12 thin strips of husk for tamale binding; set aside.
- While the husk is soaked, mix chicken, cheese, cilantro in a bowl, peas, olives and salsa. Add the cornmeal mixture and stir to uniformity.
- Spread the husk on the work surface, wide side up. Starting from the top edge, spoon with 2/3 tbsp. toppings in center, form a 5 by 10 cm rectangle, leaving place below for folding.
- Roll tamale into a roll to close the filling. Fold bottom end the husk and tie with one strip of husk. Repeat with remaining husks, filling and stripes. Add 2.5 cm of water to deep pan with a tight-fitting lid; put the steam basket to the pan. Place tamale in a basket vertically (closed side down). Bring water to a boil over medium heat; cover and steam for 25 minutes, adding more water as needed. Carefully pull the tamale out of steam basket and let stand for 5 minutes. Put on a plate; untie and open the husk, then decorate the tamale sliced fresh cilantro. In this chicken tamale you can add a little pungency due to chili pepper.
