Pork in pineapple is not only a combination of amazing tastes, but and a beautiful presentation of your dish. Guests will be surprised. A pineapple it is cleaned and stuffed with meat cut from ready-made pork ribs. Then it turns into a bacon grid, which after frying on the grill will resemble a pineapple peel. The green top is not throw it away, the dish will look more interesting with it. When baking the meat inside will warm up with the prominent pineapple juices and become even more tender, and the “peel” of bacon will become super crunchy. - 1 large ripe pineapple
- 450 gr barbecue pork ribs, separate the meat from the bones
- 12 slices of bacon (see Note)
- Special equipment: 12 long bamboo skewers

Recipe preparation:
- Preheat the grill to moderate heat, preparing an indirect zone heat:
- For gas grills with 3 or more burners: turn on all burners over medium high heat; after about 15 minutes turn off one of the medium burners and turn down the heat to the rest average.
- For charcoal grills: lay out one complete starter burnt coal on one side of the grill. Install the grease pan on the other hand, to avoid ignition. If necessary refer to the grill instruction manual.
- Use a sharp knife to cut the top and bottom of the pineapple and set aside them to the side. Strip the peel with pineapple. Via cut a cavity in a pineapple with a small knife so that the walls remain 2 cm thick.
- Stuff the pineapple with pork. Install the upper and lower parts pineapple into place and fasten them with four long bamboo skewers.
- Lay a large sheet of parchment on the work surface. Place 6 slices of bacon horizontally on paper. The edges slices should touch, but not overlap. Working with with the remaining 6 slices, twist the bacon, raising alternating horizontal slices and placing a slice of bacon vertically on top or under horizontal to get a lattice pattern. Wrap the pineapple with a bacon grid and fasten it 8 long bamboo skewers. Trim the kitchen scissors ends of skewers to a length of 1 cm.
- Put the pineapple with pork on the grill over the set under grill tray for fat. Close the grill and cook until the bacon will not brown and will not become crispy, and the meat inside will not warm up, about 1 hour. Then shift to a cutting board. Remove skewers, cut pineapple into rings and serve.
Note
If you buy bacon by weight or in whole, ask cut it into strips with a thickness of 0.3 cm. If slices are too thick, they won’t be able to stretch normally to wrap pineapple.
