- Wash, peel, chop coarsely.
- Peel, wash and chop the onion into large pieces.
- Wash the tomato, cut coarsely into slices.
- Beat vegetables with three tablespoons of olive oil in a blender.
- Heat the pan with the remaining oil, pour in the vegetable puree, pepper, salt, stir, simmer for ten minutes.
- Put the stewed vegetable in a separate preheated dry pan. puree (part, leave about three tablespoons), break on top the eggs.
