Summer salad with ptim

A delicious and satisfying salad is prepared on the basis of ptim, small pasta, also called Israeli couscous for outward similarity. Boiled ptitim mixed with caramelized onions for a richer taste and fried on the grill or in the oven in grill mode with slices of zucchini, parsley and arugula, which fill the salad with summer freshness and juiciness. Some goat cheese for a velvety texture and tart lemon juice dressing and wine vinegar, and the salad is very tasty. Serve it like an independent dish or a side dish for meat.

The recipes use volumetric containers with a volume of: 1 glass (st.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cup (Art.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cup (st.) – 60 ml 1 tablespoon (tbsp.) – 15 ml. 1 teaspoon (tsp) – 5 ml

Ingredients for the recipe:

  • 1 tbsp. ptitima
  • 1 small red onion
  • 1/4 Art. olive oil
  • 1 stripe zucchini
  • 1/4 Art. lemon juice
  • 2 tbsp. l fresh parsley
  • 1 tsp white wine vinegar
  • 1 tbsp. arugula
  • 220 gr goat cheese, chilled and crumbled

Recipe preparation:

  1. Boil the bacon as recommended on packaging.
  2. Preheat the oven in grill mode.
  3. Cut the onion into thin rings and fry in a pan in 2 tbsp. l olive oil over medium heat until caramelized, about 20 minutes.
  4. On a baking sheet, mix the remaining 2 tbsp. l olive oil and a pinch of salt and ground black pepper with zucchini and roast in the oven in grill mode for about 5 minutes until cooked and in some places toasted edges.
  5. Stir in zucchini and caramelized onions in boiled ptim. Then add lemon juice, parsley, white wine vinegar, arugula, goat cheese and some salt and black pepper and mix to evenly distribute the ingredients.
