Summer salad with pasta, shrimp and green beans

For the preparation of this summer salad, mix in one bowl. boiled pasta (preferably small, for example, campanelle), tomatoes, green beans and prawns fried in a pan. To make the beans slightly tender and pleasantly crispy, blanch it first boiling water, and then abruptly pour over ice water. For shrimp frying so it only takes a few minutes, and then they turn out elastic and juicy. Ready salad mixed with light vinaigrette dressing, which fills it with a refreshing taste. You can serve as hearty independent dish. Ingredients for the recipe:

  • 220 gr medium shrimp, peeled from shells and intestinal veins
  • 2 tbsp. l white wine vinegar
  • 1 small shallots, minced
  • 1/3 Art. + 1 tbsp. l olive oil
  • 1 tbsp. chopped and chopped green beans
  • 220 gr Campanelle pasta (bells) or other pasta tubular shape
  • 1/4 Art. chopped fresh chives
  • 2 medium tomatoes, chopped

Recipe preparation:

  1. In a large pan, bring salted water to a boil.
  2. In a large bowl, mix vinegar, shallots, 1/3 tbsp. olive oil, 0.5 tsp salt and a little ground black pepper.
  3. In a medium-sized frying pan over medium heat, heat the remaining 1 tbsp. l olive oil until it starts to flicker. Add shrimp, 1/4 tsp. salt and a little black pepper and fry, stirring until tender, about 3 minutes. Shift to a plate.
  4. Boil green beans in boiling water until it becomes crispy soft, 3-4 minutes. Throw the beans into a colander with a slotted spoon and place under a stream of cold water so that it ceases to boil. Add the beans to the dressing bowl.
  5. Pour pasta into boiling water and cook according to recommendation on the packaging. Drain and rinse the paste under cold water to keep it cool; put in a bowl with dressing and beans.
  6. Add shrimp, onions and tomatoes to the bowl and mix. Salt and pepper to taste. The best pasta salad serve right away.
