In a small bowl, mix yogurt, dill, cucumber, 0.5 tsp. salt and a little ground black pepper. Cover and place in refrigerator until ready to serve.

Summer rolls:
Boil the rice noodles according to the instructions on the package. Drain, dry the noodles.
- Preheat the street grill or grill pan to moderate high heat.
- Grill the onions until they appear toasty gratings, about 3 minutes on each side. Split onion circles on separate rings.
