Succotash Salad with Pasta and Bacon

  • 8 thick slices of bacon, finely chopped

  • 1.5 tbsp. l freshly squeezed lemon juice
  • 1 tbsp. frozen small lima beans, thaw
  • 1 tbsp. frozen corn in grains, defrost
  • 1 tbsp. halved grape tomatoes
  • 0.5 tbsp. thinly chopped green onions

Recipe preparation:

  1. In a large pan, bring salted water to a boil.
  2. Meanwhile, put the bacon in a large cold pan, then heat over medium heat and fry, stirring occasionally, until it becomes crispy, about 10 minutes. Put it on a plate, covered with a paper towel to drain fat.
  3. In a large bowl, mix mayonnaise, sour cream, onions, lemon juice, 0.5 tsp salt and a little black pepper.
  4. Boil the beans in boiling water until soft, about 15 minutes. Add the corn and continue cooking until the grain becomes soft, about 2 minutes. Skim the beans and corn in a slotted spoon. colander and put under a stream of cold water so that the corn and the beans stopped boiling. Drain and add everything to a bowl with refueling.
  5. Pour pasta into boiling water and cook according to recommendation on the packaging. Drain and rinse the paste under cold water to keep it cool; put in a bowl with refueling.
  6. Add tomatoes and green onions to the bowl and mix. Season with salt and pepper and sprinkle with crispy bacon. Salad with pasta is best served immediately.
