Stuffed Shepherd Potatoes casserole

Ingredients for the recipe:

  • 4 thick-skinned potato tubers Russet Burbank (approx. 220 gr. each)
  • 70 gr. butter
  • Chopped onion half
  • 3 cloves of garlic, chopped
  • 1 tbsp. l chopped fresh thyme
  • 350 gr ground beef
  • 1 tbsp. lightly salted beef broth
  • 3 tbsp. l ketchup
  • 2 tsp Worcester sauce
  • 1 tbsp. frozen green peas with carrots, defrost
  • 1 tbsp. grated cheese Colby Jack (about 120 gr.)

Recipe preparation:

  1. Poke the potatoes in several places with a fork. Put in microwave and bake until cooked, 14-16 minutes.
  2. Meanwhile, in a large frying pan over moderate heat melt 1 tbsp. l (15 gr.) Butter. Add onion, garlic, thyme and 1/4 tsp salt. Stir fry until onion soft, about 4 minutes.
  3. Add minced meat, 0.5 tsp. salt and a little ground black pepper and cook, breaking the mincemeat, until it all darkens, about 4 minutes.
  4. Stir in beef broth, ketchup and Worcester sauce and bring to slow boil. Cook, stirring occasionally, until light thickening, 6-8 minutes. Then mix the peas and carrots and warm up for about 1 minute; salt and pepper.
  5. Preheat the oven in grill mode. Cut the potatoes along cut in half and fork the pulp. For every half potato lay out 0.5 tbsp. l (75 gr.) Butter, salt and pepper. Put on a baking sheet. Spread the meat mixture over halves of potatoes, then sprinkle cheese on top. Fry in oven until the cheese is melted, about 2 minutes.
