Peppers stuffed with mushrooms and rice for the winter
Fine peppers can not only feed the family, peppers look great as a decoration for meat dishes. By the way mushroom peppers – this is a great beautiful snack for anyone feasts, if the peppers are multi-colored.
To cook stuffed peppers we need:
- Bulgarian pepper 15 pcs
- carrots 1.2 kg
- onions 1 kg
- mushrooms: if dried 60-80 gr, fresh – 0.5-0.7 kg
- rice 0.5 cup
- oil grows 1 cup
- parsley
- parsley root
You can cook stuffed peppers for the winter So:
Pepper, preferably multi-colored, clear of stalks, seeds and membrane In boiling, slightly salted water, lay the pepper and Blanch for 3-4 minutes over medium heat. Remove and cool the pepper, but do not pour the broth, you will need it.
Pour the vegetable oil into a large deep pan and put grated carrots and parsley root, and after 15 minutes finely chopped onion.
When the onion is almost ready, set aside 3-4 tablespoons vegetables for ketchup. Add the boiled sliced to the remaining vegetables mushrooms, herbs and rice. Add water so that it is higher 1 cm pan contents. Stew the filling for stuffing 15-20 minutes with a closed lid.
While preparing mushroom stuffing for pepper, cook ketchup.
Preheat the broth from pepper (about 1 liter) and add the floor glasses of tomato paste, previously set off vegetable roasting, salt, floor teaspoon of vinegar and 1 teaspoon of sugar and, if desired, a couple sprigs of cilantro for flavor.
Stuff the prepared pepper with the prepared mushroom filling and put it in sterilized jars. Pour into jars of pepper boiling ketchup sauce to the shoulders.
Sterilize jars of 0.5 l for 20 minutes and roll up the lids.
But in the winter, taking out this chic stuffed in a special way pepper, season it with mayonnaise and sprinkle with herbs and garlic. I’m sure I’ll have to get a couple more cans afterwards …
