Stuffed Manicotti in Tomato Sauce ricotta, spinach and bacon

Ingredients for the recipe:

Manicotti

  • 8 tubes of manicotti or cannelloni (pasta in the form of tubes)
  • Vegetable oil
  • 1 tbsp. l olive oil
  • 9 slices of smoked bacon, cut into pieces
  • 285 gr. frozen spinach
  • 425 gr. ricotta cheese at room temperature
  • 1/3 Art. grated parmesan at room temperature
  • 1/4 tsp ground black pepper
  • 1/4 tsp nutmeg
  • 1 large egg, room temperature
  • 120 gr. grated mozzarella for sprinkling
  • Olive oil spray

Sauce

  • 2/3 Art. whipped cream
  • 1/3 Art. whole milk
  • 1 tbsp. l flour
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • 2 large pinch of nutmeg
  • 170 gr grated mozzarella
  • 1.5 tbsp. tomato sauce with basil

Recipe preparation:

  1. Preheat the oven to 190 degrees. Lubricate oval or rectangular baking dish with vegetable oil. For manicotti: bring to a boil a large pot of water on medium heat. Add butter and pasta. Cook until they become soft, sometimes stirring, for 5 to 7 minutes. Drain and cover, so that the pasta is steamed slightly.
  2. In a large frying pan, cook the bacon until crisp and brown, about 7 minutes Put on paper towels, let the oil drain and set aside to cool. In a large bowl mix chilled bacon, spinach, ricotta, parmesan, 1/2 tsp. salt, pepper, nutmeg and egg. Stir until smooth. Using a small spoon, fill the manicotti tubes with a mixture of ricotta.
  3. For tomato sauce: medium-sized stewpan mix whipped cream, milk, flour and nutmeg, season salt and pepper, and boil until thick over medium heat. Add mozzarella little by little, constantly stirring until the sauce becomes thick. Reduce the heat to a minimum and wait until the sauce cease to boil, about 1 min., stirring occasionally. Mix in tomato sauce. Pour half the sauce into the bottom of the prepared pan for baking. Put manicotti in a single layer on the sauce. Pour out the remaining sauce on top of the manicotti and sprinkle mozzarella on top. Pour olive oil and cover the dish with foil. Bake until cheese melting, from 20 to 25 minutes.
