  1. Grind the cloves of garlic and basil leaves.
  2. Mix spiced olives (pitted) with minced garlic and basil. Salt and pepper. Add 1 tbsp of olive oil, squeeze the juice from the lemon. Mix all the ingredients for the filling. Chicken.
  3. Wash my chicken carcass and dry it with a paper towel. Cut off excess fat and coccygeal sebaceous gland (it gives an unpleasant odor when baking and it is harmful to eat). Rub the chicken with salt, pepper, favorite spices and olive oil.
  4. Inside the carcass lay the filling.
  5. We fasten the chicken skin with wooden toothpicks so that the filling did not fall out.
  6. Place the chicken in a baking sleeve and bake in a red-hot up to 200 degrees the oven for 1 hour.
  7. Then, carefully, so as not to leak fat, make a small incision in sleeve and bake chicken for another 10-15 minutes to form a rosy crusts.
  8. Turn off the oven and leave the chicken in it for another 20 minutes, so that it is saturated with the fragrant aroma of spicy olives and the basilica.
