Recipe preparation:
- Bring a large pot of water to a boil. Add green beans and blanch it for 2-3 minutes until it is softer, but still be crispy. Throw the beans into a colander and immediately put in a bowl of ice water so that the beans no longer cook and remained bright green.
- To make gremolatas, mix the garlic in a small bowl, lemon zest, parsley, parmesan and pine nuts.
- Before serving, heat in a large frying pan on medium fire olive oil. Drain the beans and pat dry. Put the beans in a pan and fry, often stirring, for 2 minutes until it is covered with olive oil and warmed up. Turn off the stove, add the gremolate and mix well. Sprinkle 3/4 tsp salt and 1/4 tsp pepper and serve hot.
