String Beans with Gremolata

There is a very simple way to revitalize the taste of blanched green beans and make an exquisite garnish out of it. Sprinkle the cooked beans gremolata – Italian seasoning of fresh parsley, garlic and lemon zest. The riot of flavors of gremolata perfectly complements grated parmesan and crunchy pine nuts. Ingredients for the recipe:

  • 450 gr green beans, trimmed
  • 2 tsp chopped garlic (2 cloves)
  • 1 tbsp. l grated lemon zest (2 lemons)
  • 3 tbsp. l chopped parsley
  • 3 tbsp. l grated parmesan
  • 2 tbsp. l roasted pine nuts
  • 2.5 tbsp. l olive oil

Recipe preparation:

  1. Bring a large pot of water to a boil. Add green beans and blanch it for 2-3 minutes until it is softer, but still be crispy. Throw the beans into a colander and immediately put in a bowl of ice water so that the beans no longer cook and remained bright green.
  2. To make gremolatas, mix the garlic in a small bowl, lemon zest, parsley, parmesan and pine nuts.
  3. Before serving, heat in a large frying pan on medium fire olive oil. Drain the beans and pat dry. Put the beans in a pan and fry, often stirring, for 2 minutes until it is covered with olive oil and warmed up. Turn off the stove, add the gremolate and mix well. Sprinkle 3/4 tsp salt and 1/4 tsp pepper and serve hot.
