Stratatella is a light and tasty Italian egg soup that You can cook at home with this recipe. I offer you it variation “a la rus”: when a piece of parmesan was not littered at home and I want to make the soup a little more classic strachetella!

  1. Cut the ham into cubes and fry in vegetable oil on medium 5 minutes on fire.
  2. Grate cheese on a fine grater, chop green onions.
  3. In a bowl, mix the eggs, grated cheese and nutmeg.
  4. Pour the egg mixture into the hot chicken stock, stirring everything whisk.
  5. Add fried ham to the soup, mix everything with a whisk and cook on low heat for 3-4 minutes.
  6. You can serve strachatella soup with green onions or parsley.
