- 2 tsp fresh chopped ginger
- 3 cloves of garlic, chop
- 8 dried chili de arbola peppers (or 2 fresh jalapenos, cut in half)
- Coarse salt
- 350 gr shiitake mushrooms, remove legs, cut hats into four parts
- 450 gr sugar peas in pods, remove streaks, cut the pods in half

Recipe preparation:
- Prepare the marinade: mix in a large bowl 2 tbsp. l corn starch, rice wine, oyster sauce and 2 tbsp. l water. Cut tofu into two pieces, then cut each piece into 4 square. Add tofu to the marinade and mix.
- Heat peanut butter in a pan to medium temperature. Add peanuts and fry, stirring, until light golden brown, 4 – 5 minutes. Using a slotted spoon, shift the nuts into a bowl.
- Remove the tofu from the marinade and roll in the remaining starch. Heat the same frying pan with oil to a moderately high temperature. Add tofu and sauté until golden brown, 4 minutes each. with each side.
- Transfer tofu to a dish. Add ginger, garlic to the pan, chili peppers and 1 tsp. salt. Fry, stirring constantly, for 30 sec Add mushrooms, green peas and continue to fry, stirring constantly until golden brown.
- Mix marinade with 1.5 tbsp. water and add to the pan, bring to a boil and continue cooking, stirring, until thickened, 2 – 3 min Add tofu, nuts to the pan and warm a little. Before serve, remove chili peppers.
