Stir fry noodle with bacon and kimchi

Recipe preparation:

  1. Bring a pot of salt water to a boil. Add broccoli and cook until bright green and light softness, 3-5 minutes. Place with forceps on a colander and briefly place under a cool water (the water in the pan continues to boil). Meanwhile in a small bowl mix kimchi brine, sesame oil, brown sugar, garlic and red pepper flakes.
  2. Heat a large non-stick pan over moderately high heat. Add vegetable oil and bacon and fry, stirring until bacon is crispy, 5-7 minutes. Add the onion and continue to fry until it is browned and softens, about 5 minutes. Stir in kimchi and continue to fry until softness, about 2 minutes more.
  3. Throw the noodles into boiling water and cook until al dente, about 3 minutes. Using nippers, transfer noodles to a frying pan (do not pour water from the pan). Shuffle to fully cover the noodles with the onion mixture.
  4. Add broccoli and kimchi sauce to the pan to mix distribute everything evenly, about 1 minute. (Add up to 0.5 tbsp. cooking liquid if the noodles are too dry.) Season with salt. Lay out on plates; sprinkle with fried sesame seeds and finely chopped kimchi.
