Steamed halibut with sothi sauce – a detailed recipe cooking. Time: 1 hour. 20 minutes. Difficulty: medium Servings: 6 Measured containers are used in recipes volume: 1 cup (st.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cups (st.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cup (Art.) – 60 ml. 1 tablespoon (tbsp.) – 15 ml. 1 teaspoon (tsp) – 5 ml.
Ingredients for the recipe:
- 900 gr. cut into 6 parts halibut without skin and bones
- 2 tbsp. basmati rice
- 6-star star anise star
- 2 chopped lemongrass stalks (white parts only)
- 2 sliced pieces of ginger 2.5 cm long.
- 2 sliced oranges
- 2 tsp coarse salt
- 1/2 tsp ground black pepper
- Additional equipment: metal or bamboo steaming basket
Sotchi sauce:
- 2 tbsp. l vegetable oil
- 2 shallots chopped in half rings
- 1/2 tbsp. chopped onion
- 2 tbsp. l ghee or ghee
- 1 sliced clove of garlic
- 1 tbsp. l chopped ginger
- 1 chopped green chili pepper
- 1.5 tbsp. l hot curry powder
- 3 fresh curry leaves (sold in specialized departments)
- 1/2 tsp mustard seed
- 1/2 tsp fennel seed
- 1/2 tsp ground turmeric
- A pinch of saffron
- 2 tbsp. fish stock (see recipe below)
- 380 ml. canned coconut milk
- 2 quarter sliced tomatoes
- 1 tsp coarse salt
- 1 tbsp. l lime juice
- 1/2 tbsp. fat cream

Recipe preparation:
- For sauce: In a large saucepan over medium-high heat. heat the vegetable oil. Put shallots and onions and fry until lightly browned for about 5 minutes. Reduce heat to medium; add ghee, garlic, ginger, pepper chili and cook for 2-3 minutes. before the aroma.
- Add curry powder, curry leaves, mustard seeds, seeds fennel, turmeric, saffron and cook, stirring, 2 min. Pour in fish stock, coconut milk, add tomatoes and salt. Cook sauce without covering the pan with a lid, 15 min. Reduce the fire to weak, add lime juice and cream. Support warm. For rice: Rinse rice to clear water, then soak in warm water for 10 minutes Drain the water. In a large pot of boiling boil the rice for 6 minutes with salted water. Pass the rice and keep warm.
- For fish: In a pot on which you can install steaming basket, put star anise star, lemongrass, ginger and pour water. Bring water to a boil over high heat. Lay out the bottom of the steam basket with orange slices. Salt and pepper the fish and put it on an orange. Set the basket to cover the pan and simmer for 8 minutes. with rice and soda sauce as a side dish.
