- Wash and dry the lemon. Remove the zest with a fine grater. Squeeze the juice.
- Peel the onion and chop it very finely. Garlic and parsley are also very finely chop. Mix with juice and lemon zest, olive oil, salt, pepper and sugar.
- Squid fillet clear of films and plates. Rinse and dry. Cut into strips of 4×2 cm.
- Put squid strips in a saucepan, add crushed cloves of garlic, thyme and parsley, pour the wine, salt and pepper. Fill with cold water so that the water covers the squid.
- Bring to a boil over low heat and remove from heat.
- While the squids are warm, mix them with dressing. Give salad infuse for about 15 minutes, or better – for a couple of hours.
- Salad served with toasted bread.
