  1. Wash and dry the lemon. Remove the zest with a fine grater. Squeeze the juice.
  2. Peel the onion and chop it very finely. Garlic and parsley are also very finely chop. Mix with juice and lemon zest, olive oil, salt, pepper and sugar.
  3. Squid fillet clear of films and plates. Rinse and dry. Cut into strips of 4×2 cm.
  4. Put squid strips in a saucepan, add crushed cloves of garlic, thyme and parsley, pour the wine, salt and pepper. Fill with cold water so that the water covers the squid.
  5. Bring to a boil over low heat and remove from heat.
  6. While the squids are warm, mix them with dressing. Give salad infuse for about 15 minutes, or better – for a couple of hours.
  7. Salad served with toasted bread.
