Spring salad with chicken and potatoes

Fresh juicy vegetables give the spring flavor to this salad: green Romano salad, cucumber, bell pepper and radish. Chicken and small Young potatoes will add satiety and texture. Boil potatoes right in the peel so as not to lose the beneficial trace elements that are in it contains. A chicken can be used, for example, from yesterday residues. Yoghurt will give a pleasant tart flavor to the salad dressing with green onions, fresh tarragon, a little wine vinegar and olive oil. Ingredients for the recipe:

  • 1 grilled chicken, remove the skin, shred the meat (about 2 Art.)
  • 220 gr small red potatoes, cut in half
  • 2 tbsp. l chopped chives
  • 2 tbsp. l chopped tarragon
  • 2 tbsp. l white wine vinegar
  • 1/4 Art. low Greek plain yogurt fat
  • 1/4 Art. olive oil
  • 4 Romano Lettuce Hearts Torn
  • 4 radishes, sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cucumber, peeled, cut in half, peeled and diced

Recipe preparation:

  1. Put the potatoes in a small pot and fill with water. Salt, cover and simmer until cooked, about 6 minutes. Drain and cool the potatoes.
  2. Meanwhile, chop the chives, tarragon in a food processor, vinegar, yogurt, 0.5 tsp salt and pepper to taste. Pour in a little olive oil to make a thick dressing.
  3. In a large bowl, combine romano, potatoes, chicken, cucumber, radishes and bell peppers with dressing. Salt and pepper over to taste.
