And let the endive salad play bright flavoring colors, add finely chopped apples to it, crumbled blue cheese, walnuts and pour amazing dressing based on soy sauce and sherry vinegar with the addition of egg yolk, Dijon mustard, onion and oil grape seed. - 4 tbsp. finely chopped endive (put in cold water, to prevent oxidation)
- 0.5 tbsp. peeled green apples, sliced thin straws
- 0.5 tbsp. crumbled blue cheese
- 0.5 tbsp. thinly chopped red onions
- 1/4 Art. walnuts fried
- 2 tbsp. l fresh tarragon leaves
- 1/4 Art. soya-sherry dressing, see recipe below
Soya Sherry Dressing
- 0.5 tbsp. sherry vinegar
- 1/4 Art. soy sauce
- 1 tbsp. l Dijon mustard
- 0.5 tsp chopped shallots
- 1 egg yolk
- 1 tbsp. grape seed oil

Recipe preparation:
- In a medium-sized bowl, mix endive, apples, blue cheese, onions, walnuts and tarragon. Add Soya Sherry Dressing (vary its amount to taste), salt and pepper.
- Soya-sherry dressing: mix sherry in a blender vinegar, soy sauce, Dijon mustard, shallots and egg yolk. Without stopping the blender, pour grape seed oil into the mixture. Pepper (salt from soy sauce will be enough to salt gas station).
