Spring rolls are widespread in the cuisines of the southeast Of Asia. This is a whole variety of cold snacks that are a filling wrapped in a sheet of rice paper or another thin dough. Mostly they choose vegetables for the filling, seafood and chicken, and to further emphasize the taste, to ready-made rolls are traditionally served with peanut or soy sauce. Such the dish turns out not only very beautiful and bright, but also useful. Cooking requires some skill, rice paper is pretty fragile, so you should take care of a couple of spare sheets. Ingredients for the recipe:
- 180 gr. rice vermicelli “angel hair”
- 12 sheets of round rice paper with a diameter of 20 cm.
- 1 orange bell pepper, core and seeds
- 1 red bell pepper, core and seeds
- 1 yellow bell pepper, core and seeds
- 2 tablespoons borsch beets, peel
- 1 large carrot
- 1 cucumber
- 1/4 Art. homogeneous peanut butter
- 2 tbsp. l hoisin sauce
- 1 tbsp. l garlic chili sauce
- 2 tsp oil from fried sesame seeds
- Juice with 2 limes (about 2 tbsp. L.)
- 2.5 tbsp. chopped boiled chicken
- 1/4 Art. chopped cilantro leaves
- 1/4 Art. mint leaves, coarsely chopped, and 36 whole leaves for decoration
- 4 scallions, finely chopped
- Special equipment: grater shredder

Recipe preparation:
- Cook rice noodles following the instructions on the packaging. Pull out and spread them evenly on a baking sheet. Using a pair of kitchen scissors cut the noodles into pieces 10 cm long.
- On a grater-shredder, rub all three with a long thin straw bell peppers. Then chop the beets, carrots and cucumber thin circles.
- In a small cup, whisk until smooth. peanut butter, hoisin sauce, garlic chili sauce, sesame oil, lime juice and 1/4 tbsp. warm water. Salt to taste.
- In a large bowl, mix the chicken, cilantro, mint, green onions and 2 tbsp. l peanut sauce so that it completely covers the meat and greenery.
- Prepare a place for twisting the rolls by placing it there a wet chopping board, a medium-sized cup of water and a dish. Arrange the bell peppers, beets, carrots, cucumber, rice noodles, chicken seasoned with greens and rice sauce paper.
- Take 1 sheet of rice paper and moisten it a little with water, so that it is slightly softened. Put it on a cutting board and make sure the surface is completely flat. On put 3 mint leaves in the middle of the sheet at a distance of about 5 mm. apart (tops of leaves in a direction from yourself). On top of the first mint leaf, lay out 3 strips of yellow bell pepper.
- On the second leaf, lay out 3 strips of red bell pepper. And on the third, 3 strips of orange bell pepper. Over paprika a little overlap lay in a row 6 slices beets. Pepper should stick out from under the beets for about 2.5 cm. each side. Above a row of beets, lay out also a lap row of 6 slices of cucumber.
- Lay out a row of 6 carrot slices below the beets. Take a bunch chopped rice noodles (about 4 cm in diameter) and lay it out on top of a row of beets, make sure that it does not fall apart. Over put noodles 2 tbsp. l with a slide of chicken.
- Cover the filling with the edge of the paper closest to you, then wrap the edges on the sides, as if you were wrapping a burrito and rolling into tight roll. Put the finished roll on a plate and cover with a damp with a towel to protect it from drying out, follow the same steps with the remaining 11 sheets of rice paper and the filling. Serve along with the remaining peanut sauce to dip in it rolls.
